Spinach Salad w/Warm Bacon Dressing

Ingredients
- 8 oz young spinach, stemmed, washed, dried
- 2 ea eggs, boiled, sliced
- 8 pc thick-sliced bacon, fried, crumbled
- 3T bacon fat
- 3 T red wine vinegar
- 1 t sugar
- 1/2 t Dijon mustard
- 4 ea large white mushrooms, sliced
- 3 oz red onion, very thin slice
Instructions
- Place the bacon fat in a small saucepan over low heat, then whisk in the vinegar, sugar, and mustard. Season to taste.
- Toss the spinach, mushrooms, onions, and bacon into the dressing.
- Plate, garnish with egg slices, and serve.
